Producing with the greatest respect for the environment is a duty for a prestigious protected designation of origin such as Champagne. Champagne Jaillant & Co is committed to this approach to sustainable development supported by the Ecophyto 2018 plan, and strives to improve every year through:

VDC-certified vineyard since 2022 (Sustainable Viticulture in Champagne)
Implementation of a soil maintenance strategy adapted to changes in the climate in order to preserve the vineyard
A plant- and environment-based approach for each plot, meaning tailor-made viticulture
Investment in new equipment for mechanical soil management
Grass cover on one third of the vineyard

Consistent quality
of our Champagne wines

Producing a quality Champagne begins upstream with a high-quality harvest, made possible by everyone's commitment in the vineyard throughout the year. As the harvest approaches, carefully monitoring the ripeness of each plot is essential in order to determine the optimal date for picking the grapes and preserve the aromatic potential of each one. For us, this first step is the fundamental foundation of our winemaking process and ensures the quality of our wines.
Then, our winemaking choices focus on:

Limiting oenological inputs in order to preserve the distinctive characteristics of our terroir
Reducing the use of sulfites by implementing a strict hygiene protocol throughout the entire winemaking process
Separating the juices into three fractions: first press, cuvée and taille, in order to broaden our blending possibilities and highlight the profile and power of each of our Champagnes.

The winemaker's role is simply to enhance what nature offers us each year. Anne-Françoise Jaillant
